Agregamos 1cda de aceite de oliva y doramos los ajos, orégano, hongos, pimientos rojos y zuchinnis; sazonamos y dejamos que suelten sus sabores a fuego medio por 4 minutos y agregamos las cebollas, culantro y sofreímos 2 minutos. Agregamos zanahorias ralladas, tomates e integramos todo y dejamos 4 minutos más.

- Agregamos el caldo de cabeza y la pasata, verificamos sal y dejamos cocer todo por 5 minutos más, justo un minuto antes de terminar agregamos las colas, para el último hervor.
- Los Bugatelis los cocemos por 12 a 14 minutos, checalos para tu punto de cocción. Al final los mezclas con la salsa y sirves con las colas arriba de la presentación.
